Equipment

Ingredients
  

  • 1 green plantain
  • 1 tablespoon melted coconut oil
  • 0.5 teaspoon salt
  • 1 tablespoon paprika powder optional
  • 1 tablespoon lime zest optional
  • 1 tablespoon cayenne pepper optional

Instructions
 

  • Preheat oven to 175 C or 350 F and line a baking tray with parchment paper.
  • Cut the top and bottom ends of the plantain. Using the tip of a knife, slit lengthwise down the plantain, only cutting as deep as the peel is thick. Carefully peel and discard the skin.
  • Thinly slice the plantain using a mandolin slicer. They should not be paper thin but thin enough so they can turn crispy.
  • Add the chips to a mixing bowl and season with salt and coconut oil.
  • Mix well and place the seasoned slices on a baking sheet, making sure the slices don't touch each other. They won't crisp up if they touch each other.
  • Bake the plantain chips for about 22 to 24 minutes till all pieces are perfectly cooked and crispy.
  • Keep a close eye towards the end as cooking times can vary based on the oven type.
  • Once they are out of the oven and are still hot, sprinkle a pinch of salt and additional seasoning (optional) of your choice. We like paprika powder for a sweet and peppery taste, cayenne pepper for a bit of spice or, lime zest for a fresh citrusy taste.
  • Let them cool for about 10 minutes after they are out of the oven. Enjoy snacking!
