Anjeer (dried fig) burfi
These delicious and healthy anjeer (dried fig) burfis require only 5 ingredients and less than 30 minutes to make!

- 220 g dried figs chopped
- 120 g soft pitted dates chopped
- 1 teaspoon ground cardamom
- 100 g mixed nuts chopped
- ½ tablespoon butter
- 4 tablespoon water
Dry roast the chopped nuts in a pan, on a low flame till they are crunchy. Set them aside.
To the same pan, add the chopped figs and stir well. Sprinkle the water and cook till they are soft.
Add the dates, ground cardamom and mix well.
The mixture will be very sticky at this stage. Add the butter to prevent it from sticking to the pan and combine everything well.
Finally, fold in the chopped nuts and cook for 5 minutes till the mixture is firm.
Place a parchment paper on a flat wooden surface and transfer the burfi mixture on it.
Place another parchment paper on top and gently roll the mixture till it is flat and about half an inch thick.
Let it cool completely, and then cut into diamonds or squares. Enjoy!
