Anjeer (dried fig) burfi

These delicious and healthy anjeer (dried fig) burfis require only 5 ingredients and less than 30 minutes to make!

Ingredients
  

  • 220 g dried figs chopped
  • 120 g soft pitted dates chopped
  • 1 teaspoon ground cardamom
  • 100 g mixed nuts chopped
  • ½ tablespoon butter
  • 4 tablespoon water

Instructions
 

  • Dry roast the chopped nuts in a pan, on a low flame till they are crunchy. Set them aside.
  • To the same pan, add the chopped figs and stir well. Sprinkle the water and cook till they are soft.
  • Add the dates, ground cardamom and mix well.
  • The mixture will be very sticky at this stage. Add the butter to prevent it from sticking to the pan and combine everything well.
  • Finally, fold in the chopped nuts and cook for 5 minutes till the mixture is firm.
  • Place a parchment paper on a flat wooden surface and transfer the burfi mixture on it.
  • Place another parchment paper on top and gently roll the mixture till it is flat and about half an inch thick.
  • Let it cool completely, and then cut into diamonds or squares. Enjoy!

Notes

  1. Nutrition values are a rough estimate for guidance.
  2. You can use whichever nuts you prefer. Almonds, walnuts, pistachios, cashews and pecans are a few that I like to add.
