    The BEST garlicky red pepper sauce

    Friends, I’m so delighted to share THE BEST garlicky red pepper sauce with you.
    It is rich, creamy, vibrant and loaded with the perfect flavors from roasted red peppers, garlic and tomatoes.

    requires LESS THAN 10 INGREDIENTS 

    and is very easy to make.

    Ingredients 

    You can make this sauce at any time of the year with ingredients you likely have on hand right now. All ingredients for this sauce are available throughout the year, which makes it super convenient.

    You need red bell peppers, garlic, beef tomatoes, extra virgin olive oil, salt, red pepper flakes (I used Korean Gochugaru), chilli powder and lime juice. 

    Steps to make this

    Preheat the oven to 235 C (455 F). 

    Slice about half an inch from the stem of the bell peppers. Remove the core and the seeds and cut each of them lengthwise into half. Transfer them to a large baking tray, along with crushed (with skin-on) garlic cloves and sliced tomatoes. Drizzle some olive oil and salt. Mix well and let it cook in the oven for 35 minutes, by when the peppers have a lovely char and a smoky aroma. Make sure you mix everything halfway through the cooking time.

    Once out of the oven, peel the roasted garlic skin and transfer everything to a high-speed blender jar. Add red pepper flakes, chilli powder, lime juice, fresh clove of garlic, about a tablespoon of olive oil and blend everything.

    Adjust the seasoning by adding more salt, chilli powder or lime juice if necessary and enjoy!

    Serving instructions

    This is an excellent sauce for salad bowls, tacos, pasta, pizzas, burgers, Italian dishes, and beyond. 

    Storage instructions

    You can make this sauce in advance, and it freezes beautifully, making it perfect when you want to get dinner on the table in a hurry!

    You can also reheat this sauce on the stovetop or in the microwave and use it as a pasta sauce or even make a baked pasta casserole!

    2. I prefer blending the roasted red peppers with their skin on, in a high-speed blender. This adds a lovely smoky flavour to the sauce while still retaining the smooth and creamy texture. If you do not like the skin, you may want to peel it off before blending.
